Loaded Baked Potato Salad

Today we're going to my brother's house for a barbecue and maybe a bonfire if the weather gets a little better. We're celebrating my mom's birthday, which was yesterday. It should be a nice little get together.

Yesterday went better than I had anticipated with letting mom and Kathye know we just can't do those super late nights anymore. They both seemed to understand and didn't seem to have hard feelings at all. I'm always so afraid of hurting people's feelings. I let them know that with us trying to get Lauryn on a better schedule, that makes a little more Lloyd and Cari time. We used to have all the time in the world to talk and hang out and we just don't have that anymore and we both really miss it.

Time to go finish up that loaded baked potato salad and start getting me and Lauryn around.

Here's the recipe:

3/4 c. sour cream

3/4 c. mayo

8 slices of crisply cooked bacon, drained and chopped

1/2 c. red onion

1/2 tsp. salt

1/4 tsp. black pepper

6 med. baking potatoes (about 2 lbs.)

green onions, thinly sliced, for garnish

shredded cheddar cheese for garnish

1. Combine sour cream and mayo in a small bowl.

2. Chop bacon and red onion and add to sour cream mixture.

3. Stir in salt and pepper, cover and refrigerate.

4. Preheat oven to 425 degrees.

5. Bake potatoes for 50-60 minutes or until tender.

6. Remove potatoes from oven and completely cool.

7. Coarsely chop potatoes into 1/2" pieces.

8. Place in large bowl and fold in sour cream mixture.

9. Sprinkle sliced green onions and shredded cheddar cheese over top.

10. Cover and refrigerate 4-6 hours or overnight.

*Note* Pretty much everyone in my family loves cheese, so I add some extra cheddar in when I'm mixing the potatoes and the sour cream mixture :)
