Zucchini Cookies

These turned out really good.  They are very soft and moist.

3/4 c.  shortening

1 c.  firmly packed brown sugar

1 lg. egg

1/2 c. grated zucchini - unpeeled

2 1/4 c.  flour

1/2 tsp.  baking soda

1/2 tsp.  salt

3/4 tsp. ground cinnamon

1/4 tsp.  ground cloves

1/4 c.  raisins

1/4 c. nuts

In a large bowl, thoroughly mix all ingredients.  Place rounded teaspoon of batter on greased cookie sheet.  Bake at 375 degrees for 12-15 minutes or until edges become golden brown.
