Tonight I tried a new recipe for chicken tacos. I get People magazine and they always have a recipe or two from different celebrities. I usually don't think they sound like something we'd like but in the last one, Sheryl Crow used a recipe from her new cookbook for chicken tacos. They sounded yummy so I gave it a try. They were delicious! Here's the recipe:
1 1/2 c. chicken stock
1 1/2 c. mild salsa
2 boneless, skinless chicken breasts
Shells (we used soft)
Shredded Cheddar
2 c. shredded lettuce
In a sauce pan, combine the chicken stock and the salsa. Bring to a boil. Add the chicken, cover and simmer on low heat for 1 1/2 hrs. Remove chicken from pan, reserving some liquid, shred chicken with two forks. Pour reserved liquid over chicken to keep it moist (you don't need much because it's very moist already). Create your tacos! This is definitely a recipe I'll use over and over!!!
I get PEOPLE too and was also intrigued and made this. Seriously--yum! And so easy since you basically cook the chicken ala Crockpot style. I made black beans and used the leftover sauce to toss with rice & beans and it was fab! Thanks for sharing because I can't find my copy of the magazine!

ReplyDeleteI, too, got the recipe from People magazine and the first time I made them, my husband said that they are quite possibly the best thing he has ever tasted in the world of tacos. Hard to eat just one!
